Chicken Stir-Fry with Swiss Chard
Ingredients
- 300g chicken breast cut into strips
- 1 tbsp olive oil
- 2 tbsp soy sauce or Tamari
- 1 tsp sesame oil
- 2 crushed garlic cloves
- 1 piece of grated ginger (about 2cm)
- Black pepper
- 1 Swiss chard, sliced into pieces of approximately 2cm
- Sliced spring onion, keeping the white part separate (which will be used in the stir-fry) and the green part which will be used at the end
- Soy sauce
- Sesame seeds (optional)
Prepare this marinade and leave the chicken to marinate for at least 30 minutes.
- In a wide pan, fry the white part of the spring onions in the olive oil until soft (I also used a garlic and ginger paste)

- Add the Swiss chard and continue frying until it starts to wilt

- In the middle of the pan add the sliced chicken and the marinade liquid too, fry until the chicken is cooked

- Continue frying until all the ingredients are mixed together, season with a little more soy sauce if you like

Turn off the heat and sprinkle over the green part of the spring onion and the sesame

Serve with white rice or cooked vegetables
