Polenta with Shredded Chicken Sauce
This polenta is made with instant polenta — I used the one in the image below:

For the sauce, I cooked chicken breast and shredded it into a ready-made tomato sauce.
Ingredients
- 1 cup instant polenta
- 4 cups water
- 3 tbsp butter
- Salt (roughly 1 tsp)
- 1/2 cup grated cheese
- Sauce of your choice
Instructions
- In a medium saucepan, bring the salted water to the boil over a medium heat — here I used the water I cooked the chicken breast in for my sauce. You can use a beef or chicken stock instead if you prefer, or just salted water for a more neutral result

- Add the polenta little by little, stirring continuously with a balloon whisk or a wooden spoon so it doesn’t form lumps

- Cook over a low heat, stirring every 1-2 minutes so it doesn’t stick to the bottom of the pan

- Keep stirring and cook for a further 5 minutes, then add the butter and stir again

- Add the grated cheese, turn off the heat and serve immediately with the sauce of your choice on top
