Rocambole de Carne Moída (Minced Beef Roulade)
Original recipe from my Aunt Bel’s recipe notebook.

Ingredients
- 1kg minced beef
- 2 eggs, broken into the mixture
- 2 tbsp oil
- 2 tbsp breadcrumbs (for a gluten-free/low-carb version, leave out the breadcrumbs)
- Fresh herbs (chives and parsley), olives, garlic, onion and salt to season
Method
- In a bowl, mix all the ingredients well and knead

Grease a tin or baking dish and preheat the oven to 190C

On a surface lined with cling film, roll out the meat mixture into a rectangle to fill with whatever you choose. I used boiled eggs and carrots, but you can use cheese, ham, tomato, sliced onions, chopped olives, peppers, sun-dried tomato, tomato sauce, etc.


- Roll it up like a rocambole and transfer to the tin greased with oil. Close the ends so it forms something almost like a croquette.




- Brush with a little oil and bake in an oven preheated to 190C until golden, about 30 minutes
