Salmon in Orange Sauce
Ingredients
- 2 salmon fillets (220-250g)
- 2 oranges (juice)
- Salt
- Black pepper
- Olive oil
- 1-2 saffron threads (optional)
- In a medium bowl, combine the orange juice (remove the pips), 1 tbsp olive oil, about 1/2 tsp salt and a pinch of black pepper (to your taste), and the saffron.

- Leave the salmon to marinate in this mixture for at least 1 hour, turning the fillets halfway through.
- Don’t discard the marinade when you cook the salmon!
- Heat 1 tbsp olive oil in a medium non-stick frying pan and place the fillets skin-side down for about 5 minutes.
- While the salmon sears, add a few spoonfuls of the marinade to the fish and let it sizzle; this will create a caramelised crust on the bottom.
- Flip the fillets and continue basting with the juice for another 5 minutes or so.
- Remove the fillets and set them aside on a separate plate, then add all the remaining marinade to the frying pan and reduce over a medium heat.
