Fish en Papillote
Papillote is simply a little parcel you make to bake your fish, or even chicken, with vegetables of your choice. You can use: foil, bags made specifically for the oven, or baking parchment. Some examples in the images below:


Ingredients
- 1-2 fillets of the fish of your choice (I am using cod, which here is fresh cod — you can use salmon, hake, whiting)
- 1/2 courgette, sliced
- Fresh spinach or whatever green leaves you have (I used bok choi)
- 1 small onion, cut into rings or slices
- Cherry tomatoes or sliced tomatoes
- Olive oil
- Lemon juice
- Salt and black pepper to season
Method
- Preheat the oven to 200C
- Prepare a piece of foil or baking parchment approximately 60cm long and place it on a baking tray or ovenproof dish that can go in the oven, to assemble your papillote.

- Start assembling with the sliced courgette and the onion rings or pieces

- Add leaves such as spinach, chard or bok choi and season with a little salt, pepper, olive oil and lemon

- Then add the fish and the cherry tomatoes, season a little more and close the sides of your papillote as if it were a pastel, rolling the ends together and twisting so it stays firmly sealed



- Place on a baking tray and bake for approximately 25-30 minutes

- Remove from the oven and carefully transfer to a plate
