Warm Courgette and Lemon Salad
When the cold weather arrives we always start craving warmer dishes and the salad gets pushed aside. This warm courgette dish still tastes fresh, yet remains part of a hot meal,
Ingredients
- 1 courgette, sliced into ribbons
- 1 lemon (zest and juice)
- 1 garlic clove, crushed/grated
- Olive oil
- Salt and black pepper
Method
- Cut the courgette lengthways into 4 pieces and remove the seeded part (if there are a lot of seeds)
- Using a mandoline or a slicer, slice it so it looks like long ribbons; this makes the courgette cook quickly when you put it in the frying pan

- In a medium frying pan, sauté the crushed garlic and the lemon zest in olive oil (around 2 tbsp)

- Add the courgette and stir, sautéing until it is soft

- Add about 2 tbsp of the lemon juice and turn off the heat
I used spinach leaves, the courgette and also a chicken fillet seasoned with lemon, olive oil, ginger, garlic, salt and black pepper.
