Meat Pancake (Lowcarb Version)

For anyone who cannot eat wheat flour but is dying for a pancake, check out this recipe!

Ingredients

  • 2 eggs
  • 1 tbsp grated parmesan cheese
  • 1 tbsp almond flour (or another nut flour)
  • 2 tbsp water
  • Salt
  • Dried herbs (optional)
  • Butter for greasing the frying pan
  • Filling of your choice
  • Tomato sauce (optional)

Method

  1. Whisk all the ingredients together with a fork or whisk and prepare a small (20cm) non-stick frying pan over medium heat

  2. Use a small bit of butter on the spoon so that the frying pan is greased

  3. Pour approximately 1/3 of the egg mixture so that you have a very thin omelette, about 0.5 cm high

  1. Let it cook and do not stir until it is lightly golden and firm enough to flip like a pancake

  1. Flip to cook the other side for a few more minutes

  1. Fill the pancakes with the chosen filling and arrange them in an ovenproof dish with sauce

  1. If you prefer, you can cover with sauce and cheese and bake for 10-15 minutes to gratinate
